Butternut Squash Chilli

Butternut squash is such a versatile vegetable and is available year-round but is most commonly used in Autumn. This simple vegan chilli recipe is very easy to make and can be adapted to include all sorts of different vegetables and beans.

  • Cook time: less than an hour

INGREDIENTS 

  • 1 cup butternut squash
  • 3 carrots
  • 1 red pepper
  • 1 medium onion
  • 3 cloves of garlic
  • 250g red beans
  • 4-5 medium tomatoes (or one can)
  • Chilli powder
  • Cumin
  • Oregano
  • 2 cayenne peppers
  • Olive oil
