Butternut Squash Winter Salad

Butternut squash is a popular and versatile winter squash that grows on a vine. It has a sweet, nutty taste, similar to that of a pumpkin and can be cooked in many different ways. This quick and simple warm winter salad is packed full of flavours.

INGREDIENTS 

  • 1/2 a butternut squash
  • Quinoa
  • Fresh coriander
  • 3/4 cup of Manchego cheese (or another cheese)
  • 1 garlic clove
  • 3 dates
  • 1 cayenne pepper
  • Brown sugar
  • Sesame oil
  • Olive oil
  • Light soy sauce

N.B. This recipe can be easily adapted to be vegan-friendly by omitting the cheese!
