Simple Shrimp Pad Thai

Pad thai (or phad thai) is a stir-fried noodle dish that is commonly served  as a street food in Thailand and is now one of the most popular Thai dishes abroad. Traditionally it is made with beansprouts, shrimp and tofu but practically anything can be added to this easy-to-make dish.

The popular meal was actually invented in the late 1930s, as part of a campaign to promote Thai nationalism, modernise Thailand and to encourage Thais to move away from rice as their primary staple food.

  • Serves: 2-4
  • Prep time: 10 minutes
  • Cook time: less than half an hour


  • Shrimp or prawns (we use approx 4 per person)
  • 1 onion
  • 4 garlic cloves
  • 1 inch on ginger
  • 1/2 red pepper
  • 1/2 green pepper
  • Rice noodles
  • 2 free range eggs
  • Sesame oil
  • Olive oil
  • Light soy sauce
  • Salt and pepper
