Chili con carne is the official dish of Texas, USA. According to Indian legend, the spicy dish originates from the mystic ‘Lady in Blue’, Sister María de Ágreda. Although she never left her home country of Spain, she professed to evangelise savages of the New World by presenting herself before them in hypnotic visions. In 1629, 50 Jumano Indians walked out of the desert of West Texas to be baptised, telling stories of the Lady in Blue who taught them of God. They also said the Spanish Sister taught them to make a fiery stew, which over the next century became known as chili con carne. Today many vegetarian and vegan adaptations of the spicy dish exist, some with vegetables as the main focus, others using beans or Quorn as a meat substitute.

INGREDIENTS
- 2 tablespoons olive oil
- 2 garlic cloves
- 1 small onion, finely chopped
- 1/2 cup pepper (different colours if possible), finely chopped
- 8-10 medium mushrooms, finely chopped
- 1 large carrot, finely chopped
- 1 jalapeño pepper
- 4-5 medium tomatoes, diced
- 200g white beans, rinsed and drained
- 200g red beans, rinsed and drained
- 1 cup water
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 2 tablespoons chili powder
- 2 cayenne peppers, finely chopped (optional)
- 1 handful fresh cilantro (for garnish)
- Salt and pepper to taste
